"No Mac has more than one built-in Ethernet port " — Actually, all Mac Pro computers have dual built-in Ethernet ports. (Dual 10Gbps on the 2019 model, dual gigabit on all earlier models.) And of course, as you say, additional Ethernet interfaces can be added via USB or Thunderbolt dongles, or via PCIe expansion cards on models with PCIe slots.

I've been using unotelly, which provides a DNS number that you plug directly into your Apple TV and that's it. Service can be spotty at times but for the most part it works fine.
